  1. Saute a small amount of onion in pot.
  2. Add water and boil chicken for 20 minutes.
  3. Shred chicken after it cools.
  4. Saute rest of onions in skillet while chicken is boiling.
  5. Combine onions and shredded chicken.
  6. Cook tortillas in cooking spray until warm
  7. Line bottom of 8x10 greased baking dish with 4 tortillas
  8. Top with half of chicken and onions followed by 1/3 of the cheese. Spoon enchilada sauce over the cheese.
  9. Repeat previous step.
  10. Top with 2 more tortillas and cheese and enchilada sauce
  11. Bake at 350 for 15 minutes
